Chicken rezala ( White khorma )

Chicken Rezala is a really tasty MUGHLAI dish
Its exceptional flavour is absolutely divine with a not-so-thick off-white gravy.
Through this NAWABI recipe one can relish the richness of MUGHLAI food at home. 
It is not very hard to make and tastes awesome with rotis, biryani or paratha.

Serves 4

  • Chicken - 750gm
  • Ginger garlic paste- 2 tbsp
  • Onion (cut into rings)- 2 medium
  • Boiled onion(paste)- 2 medium
  • Dry red chillies- 2-3
  • Green chillies- 3-4
  • Curd - 6 tbsp
  • Cashew nut paste- 3 tbsp
  • Poppy seed paste- 2 tbsp
  • Sliced Almonds- for garnish
  • White pepper- 1 tbsp
  • Nutmeg powder- pinch
  • Saffron- 1/8 tsp
  • kewra essence: 2-3 drops
  • Ghee- 3 tbsp
  • Oil- 3 tbsp
  • Salt to taste

Whole Garam masala
  • Bay leave- 1
  • Cinnamon- 1
  • Cardamom- 3
  • Clove- 3

Optional:
  • Coconut paste- 1 tbsp
  • Cream- 2tbsp
  • Khowa-2tbsp
  • Sugar (1/2 Tsp)
  • Mace powder- pinch


How to make Chicken rezala:

Marinate the chicken with some ginger garlic paste, salt, curd, white pepper, & onion paste (atleast for an hour)

Dry roast cashew nut, poppy seeds & coconut powder.. & make it into a paste

Saute Garam masala in hot oil for 5 mins & add the marinated chicken

Add onion paste, green chillie paste & ginger garlic paste to it and cook for 15 mins


Now add the Curd, white pepper & cashew paste and cook till the chicken is tender

Now add saffron stands, nutmeg powder, mace powder & cream & let it cook on a low flame for 5-10 mins

In another pan, heat ghee & saute Red chillies & onion rings for 2-3 mins, then pour it in the curry

Add kewra essence, khowa & cook on a low flame until oil separates

Garnish with saffron strands & almond slices. And now your delicious Chicken rezala is ready. Serve it with 
roti or biryani
