Instant Curd Rice

Here is another QUICK recipe to utilise your left over rice,
It is tasty, healthy & filling,  yet very lite on stomach and easy to prepare. 
Whether you serve it COLD or HOT, it Perfect for curd lovers!!

Serves 4

Ingredients for Instant curd rice:

Boiled rice 3 cup
curd 1 cup
1 tsp grated ginger or powder
2 tbsp coriander leaves
2 tbsp pomegranate seeds
salt to taste

For tempering:
2 tbsp oil
1 tbsp mustard seeds
10 curry leaves
3/4th cup urad dal (preferably parboiled)

Method for Instant curd rice:

heat oil for tempering,
Add mustard seeds & wait till it crackles,
then throw in curry leaves, grated ginger & urad daal . cook for 2-3 minutes

Take another bowl and mix all the ingredients
(Rice, curd, salt, coriander leaves, pomegranate seeds and tempering)

Refrigerate and serve chilled.
(Mostly I like eating it hot, so i mix all the other ingredients except pomegranate seeds and cook for 10mins. mix the seeds when rice cools down little).
