Machboos or Kabsa recipe

Kabsa is also known as Machboos in the Persian Gulf region.

Preparation Time: 15 mins
Cooking Time :30-40 mins
Serves 6

Kabsa spice mix 2 Tbsp
(cardamom powder, turmeric powder, cumin       powder, black pepper powder, white pepper powder, coriander powder and cinnamon powder.)
Dry fruits (soaked rasins, almond, cashew & pine2tbsp each

Chicken 1 kg (cut into 2)
Soaked Basmati rice 2 cups 
Chopped onions 1 cup
Chopped tomatoes 1/2 cup
Shredded carrots 1/2 cup
Garlic paste 1tbsp
Tomato puree 1/4 cup
salt to taste
2 bay leaves
3 cinnamon sticks
6 small cardamom
2 black cardamom
1 black lemon or powder 1tsp
Butter 4 tbsp 
1tsp Paprika & pinch of red colour (OPTIONAL)
4 Boiled eggs (OPTIONAL)

Method of Kabsa:

This is completely optional step, originally it is never marrinated, 
but i preffer to marrinate overrnight to make the chicken more flavourfull.

Rub the chicken with salt, 1tbsp garlic paste,1tbsp khabsa spice , Paprika & red colour

Saute the garam masala in butter till it leaves aroma, then throw in onion & strir 3-4times

Then add the chicken, tomatoes & khabsa spice. cook for 5mins

Now add puree & saute for 5 mins

Add hot water, black lemon & cook till the meat is tender.
remove the chicken legs once they are cooked

 Add soaked rice, carrots, & required water to cover the rice

TIP : if you are not sure about water quantity.
 -first strain all the stock water in a seperate bowl.
-then add rice & carrots to the casserole u were cooking in.
-then pour in 4 cups of stock water  (1 cup rice = 2 cup water)

Cover & cook for 15-20mins till the rice is completely cooked

Heat butter in a seperate pan and sautey dry fruits for 5 mins
remove the dry fruits & shallow fry the chicken in the same butter for 5mins

Take out rice in a serving plate,
place the chicken & boiled eggs on the rice, then sprinkle dry fruits on the top
